I can’t tell you how happy I am that I’m actually able to get this post out on Monday! Woohoo! I pray y’all had a beautiful and blessed Easter weekend if you observe. This week’s offering comes in response to a request from one of our instagram friends, Genyne.
One of my favorite things to do is bake. Now this may seem odd because I don’t eat flour and sugar, but I do love baking. I enjoy the process and the smells. I enjoy the quiet mornings and being able to produce something delicious for my family. All that being said, I’m a busy working mom, so I really don’t have time to spend on complicated recipes. Yet, I bake muffins in the morning for my family at least weekly, but often times several times a week - and it doesn't stress me out.
Because I love you all, I want to share my secret to baking on week day mornings… I use instant pancake mix as my base for the majority of my muffin recipes. Over the years, I’ve experimented with and compiled a few recipes that use on a regular basis.
My applesauce pancake mix muffins are one of my favorites to make and my family absolutely loves them. I hope you enjoy them too!
Applesauce Pancake Mix Muffins
Makes 12 muffins
Prep time: 8 min
Bake time: 12 min
Ingredients
4 Tbsp butter (melted)
1/4 cup sugar
1 cup Instant Pancake Mix
1 egg
1/2 cup applesauce
Process.
Preheat oven to 350 degrees
Line muffin cavities with muffin liners
Melt 4 tbsp of butter in the microwave ( about 40 sec)
In a large bowl combine sugar, instant pancake mix, egg, applesauce and melted butter
Stir until just combined - do not over stir
Fill 12 lined muffin cavities
Place in the oven for 12 minutes or until fragrant and golden brown
Allow to cool
Enjoy!
